Quick, Easy, Dinner Recipes For Teachers
Tray Baked Chicken is a one pot wonder recipe! My favourite kind after a day at work a certified quick, easy, dinner recipes for teachers. Just fry off your chicken and onions, then add the rest of your ingredients into the same pot and cook in the oven. Done!
You don’t even have any dishes to clear away, if you use an oven proof enamel cast iron dish like the one I used. I love cast iron cookware because you can use it on your hob, even induction type hobs, then put it into the oven, and then serve it up in the same dish! It is so versatile, you can swap out the chorizo for any type of sausage or even streaky bacon, and you can use any combination of fresh or dried herbs from your spice rack! I have even made it low carb by leaving out the potatoes and served it with more vegetable. It’s up to you!

Tray Baked Chicken Recipe

Ingredients

- Season a large sheet of baking paper (greaseproof) with olive oil, salt and pepper, oregano & paprika. Roll chicken breasts in the flavours. Fold the paper over the chicken and flatten a little with a meat mallet.
- Add a lug of oil & melt a knob of butter in a pan. When pan is hot add red onion, diced potatoes, sliced sausage & chicken breasts to pan and cook for 4-5 minutes until golden.
- Add the lemon cut into quarters (optional), whole cherry tomatoes and rosemary. Place into a moderate oven (180 degrees) and cook for 20-30 minutes.
- Serve with grated parmesan, green salad & crusty bread.
Time-Saving Tip
I love cooking but really hate clearing up stacks of dishes. A few years ago a friend of mine told me about cast-iron cookware. It is really awesome as you can use it on the stove, as well as in the oven and also use it to serve at the table! Win-win!
Unfortunately the version she showed me was hideously expensive! After searching the internet I found a must cheaper version so now everyone can save on washing-up and enjoy this School-night recipe for teachers even more!
