Slow Cooker Italian Bean Soup Recipe
This simple Italian Bean Soup Recipe is a favourite, healthy, school-night recipe. It’s a perfect recipe for the slow cooker, Insta or crockpot. What I love about soup recipes and cooking in the slow cooker is that you can add what you like or have in your pantry and leave out what you don’t like! Make this soup with any type of beans you prefer, butter beans, white beans or Berlotti beans. Try chicken, ham hocks, bacon or leave the meat out! The same goes for the herbs, dried or fresh. Useful Equipment For Making Soup
Instructions
Peel and chop carrots, celery, tomatoes and onion.
Place vegetables in a slow cooker with ham hock and add beans, herbs, and tomato paste and season to taste. To save on washing-up try a slow cooker liner slow cooker liner!
Useful Chopping Equipment
Pour stock over ingredients and break pasta into small pieces.
Cook in the slow cooker for 8 hours on low or 4 hours on high. Remove ham hock from slow cooker and discard rind and remove meat from bone. Use two forks to ‘pull’ the meat. Add meat back into soup.
Serve with Parmesan toast.

- 1 medium onion
- 2 medium carrots
- 2 medium sticks celery
- 1 pack Cherry Tomatoes
- 1 tin Berlotti Beans
- 4 cups vegetable stock 1 pack
- 30 sticks spaghetti approx
- 1 200g ham hock or chicken thigh or chopped bacon (optional)
- 2-4 tbsp tomato paste
- 2 tsp Dried Oregano or any herbs of your choice
- 1-2 bay leaves

- If using, place slow cooker liner inside slow cooker.
